Brighton Vegetarian Mushroom Parfait

Mushroom Parfait
(Serves four)

INGREDIENTS:

400g mushrooms (field mushrooms, oyster mushrooms or Shitake)
2 shalots
200 ml madeira wine
2 eggs
200 ml cream
Thyme, salt, pepper
Olive oil

PREPARATION:
Wash and finely chop the mushrooms and the shalots and sauté them in olive oil until soft. Season with thyme, salt and pepper. Then pour in the madeira and reduce the liquid by about half. Allow the mixture to cool and then puree it. Then add two eggs and the cream. Pour the mixture into a small baking tin and place the tin in a tray with water in the bottom. Bake in the oven at 160 degrees for 20 - 25 minutes.
