Chef Thomas Herman has adapted traditional Danish hearty fare to suit modern lighter tastes and may even be headed for a Michelin star in the process. He cooks us his version of a traditional Danish Christmas dish - turbot filets wrapped in pork rump, with caramalised apples and a bacon vinaigrette.
