We get a delightful fish meal in north-eastern Italy from Trente-Aldigne’s first Michelin-starred chef Norbert Niederkofler. He’s at the St. Hubertus restaurant in the four-star Rosa Alpina Hotel, and he shows us how to prepare rainbow trout.
