Fried frozen apricots with vanilla cream

The Triton restaurant in the cellar of the Adria Hotel is one of THE places to eat in Prague and chef Michal Novak revealed the secret of his delicious dessert.

Ingredients for apricots:
30 frozen apricot halves
150 ml vanilla ice cream
1/4 liter of milk
2 eggs
200 grams of coarsely ground flour

Ingredients for vanilla cream:
2 yolks
50 ml skim (whipped cream) 33%
50 ml milk
1 small sachet vanilla sugar 10g
15 g of sugar semolina

Preparation:
Make batter from milk, eggs and flour. Mix and leave it at least 2 hours in the fridge. Then put together frozen halves of apricots with vanilla ice-cream in the middle (ice-cream goes where the stone was). Then cover the apricots with batter and then fry the apricots in oil until they are golden. Apricots must still be frozen after frying!
For the vanilla cream whisk the milk, skim, vanilla sugar and sugar semolina together and place above a pot of hot water (65°C). Whisk it till the cream is smooth. Then put aside the vanilla cream and whisk it again and you can serve it on the top of the apricots. Then you can serve the meal.
