Claudia and Bertine Talbert run a takeway on the road to Castries, the island’s capital.

The two sisters sell Creole bread, sausages, kidney skewers – and a local stew called "souse". It’s made of pig trotters or cow's heels, onions, garlic, intestines and plenty of spices.
