At low tide off Ribe, oyster hunters trek across mudflats to gather invasive Pacific oysters before the North Sea rushes back in.

Champagne sabering, a walk across tidal flats and freshly harvested oysters: In Denmark’s Wadden Sea near Ribe, an oyster safari combines culinary tradition with environmental education. At low tide, participants collect Pacific oysters, an invasive species that has spread along the North Sea coast. Biologist and nature guide Betty Horn explains the oysters’ role in the ecosystem and their impact on native species. After a four-kilometer trek through the mudflats, the tour ends with oysters and, fittingly, champagne.
