John Dory with dried fruits and stuffed potatoes

Ingredients for 1 portion:

160 gr John Dory
10 gr dried figs
10 gr dried peaches
10 gr dried plums
10 gr dried or fresh tomatoes
1 medium potato
40 gr zucchini
40 gr onions
40 gr green beans
30 gr mushrooms
8 gr olives
50 gr tomato sauce
1 shrimp
Salt, pepper, top quality olive oil

Method

Marinate the fish in the olive oil with the dried fruits finally chopped for two hours. Season the pototoes with coarse-ground salt and wrap in aluminium foil. Bake in the oven. Then remove part of the inside of the potato and put it to one side. dice the vegetables, and lightly fry them with olive oil in a saucepan. Add the homemade tomato sauce and simmer on a medium heat. Season to taste with salt and pepper. Fill the potatoes with the vegetable mixture. Bake the marinated fish and dried fruits in a closed casserole dish for about 15 minutes at 140 centigrade. Remove the lid and return to the oven for a few minutes. Reheat the potatoes and serve with the fish on a warm plate.
