Skrei - A Norwegian Delicacy

The first months of the year are arctic cod season in the Lofoten Islands in Norway. The fish is known as 'skrei' -- an old Norse word that means "the wanderer", because of its migrating habits. We meet Esteban Villalpando, chef at the Oslo restaurant "Lofoten," who likes to cook skrei coated in wild mushrooms with risotto and a mushroom creme.
