In the town centre, you'll find Rosa, a hotel and restaurant famous for its home made pasta.

Ingredients (serves 4):
1 kilo of flour
10 eggs

Make a dough from the flour and eggs and separate into three portions. Leave to stand for thirty minutes. Then knead with a rolling pin repeatedly until the dough is workable. Roll
flat and leave to dry briefly so it is easy to cut. Then fold the dough several times lengthwise and slice into fine strips.

Boil in salted water according to taste.

For the ragout:
1 onion
3 small fresh garlic sausages
3 zucchini
A handful of diced tomatoes
A handful of pumpkin blossoms
250 ml white wine

Peel and chop the onions finely, then fry in olive oil with the chopped sausages for around ten minutes. Douse with wine. Then add diced tomatoes and zucchini and leave to simmer for around thirty minutes. Season with salt and pepper and garnish with the pumpkin blossoms.
